Chinese Cuisine:
Chinese Cuisine, originated from the various regions of China and has become widespread in many other parts of the world. Regional cultural differences vary greatly within China, giving rise to the different styles of food across the nation. There are 8 great traditions of traditional Chinese cuisines out of which 4 are the most dominant. They are geographically defined as Sichuan (Western China), Cantonese (Southern China), Shandong (Northern China), as well as Huaiyang Cuisine (Eastern China), a major style derived from Jiangsu cuisine and even viewed as the representation of that region's cooking. Two more have joined these great traditions now recently and they are Beijing and Shanghai cuisine. The Buddhist vegetarian cuisine is also quite popular in some parts of China.
Orange Tofu: (V)
Ingredients:
1. 1/2 cup Veggie broth, divided
2. 1 tablespoon cornstarch
3. 4 tablespoons reduced-sodium soy sauce
4. 2 tablespoons orange marmalade
5. 1 tablespoon Vegetarian oyster-flavored sauce
6. 1 tablespoon rice vinegar
7. 1 1/2 teaspoons chile-garlic sauce
8. 4 teaspoons canola oil, divided
9. 1 pack firm tofu(drained well) cut into stips and marinated in 2 tblsp Soy sauce for 10 min.
10. 1 tablespoon minced fresh ginger
11. 1 large onion, slivered
12. 1 small red bell pepper, diced
13. 1 pound broccoli florets
Method:
1. Combine 1/4 cup broth, cornstarch, soy sauce, marmalade, veggie oyster sauce, vinegar and chile-garlic sauce in a small bowl; mix well.
2. Heat 1 teaspoon oil in a wok or large nonstick skillet over high heat. Add the tofu, toss and stir fry until browned and keep it aside.
3. Add the oil to the wok. Add ginger and stir-fry until fragrant, 10 to 20 seconds. Add onion; stir-fry for 30 seconds. Add bell pepper and broccoli; stir-fry for 30 seconds. Pour in the remaining 1/4 cup broth, cover and cook until the vegetables are crisp-tender, 2 to 4 minutes.
4. Push the vegetables to the sides. Stir the sauce mixture and add it to the wok. Cook, stirring, until the sauce becomes thick and translucent. Stir the vegetables into the sauce and return the tofu to the wok. Toss until the tofu is coated well. 5. Serve hot.
Yield: 4 servings
Spicy String beans with garlic (V)

1 lb String beans-Just discard the top part and retain the bottom part (its edible!!)
3 Tblsp-Garlic, Minced
1/4 tsp-Ginger, Minced
1 Tblsp-Red chilli flakes
5 Tblsp-Soy sauce
3 Tblsp-Rice wine or Mirin
1 Tbslp-Toasted Sesame seeds for garnish
2 Tblsp-Oil
1. Take a non-stick pan, heat oil. Add garlic and ginger and saute for a sec.
2. Now add the beans and mix well. Add soy sauce instead of Salt and saute well.
3. When it has started to cook add Mirin and cook well.
4. When is it is almost done add the chilli flakes and mix well.
5. Check for seasoning, adjust if it needs anything.
6. Garnish it with toasted sesame seeds and serve hot with Fried rice.
